The Elves’ 12 Days of Christmas Cookies (Day Eleven)

We’re nearing the end of The Elves’ 12 Days of Christmas Cookies, and have just one more feature before the grand finale with the mother ship of all elves at the end of the week.

I’m serious. Brace yourselves for that elf!

Want a hint? It’s my mother’s elf- Polly Polite, and she’s bringing her closet full of clothing to the blog.

But today, we’ve got an equally fabulous elf- my friend Mariah’s elf, Zippy!

The Elves' 12 Days of Christmas Cookies

“Our elf Zippy is adventurous and full of silly antics.  He joined our family three years ago and has been conjuring up lots of fun since then. However, he has been given strict instructions from Santa himself to not cause trouble or make a mess, but a little mischief from time to time is o.k.  Zippy also loves to party and every year he throws our kids a North Pole Breakfast with special goodies and a few gifts straight from the North Pole. Zippy also loves chocolate, but then again what elf doesn’t. Which is why he helped himself to our vintage Little Lady oven and whipped up a batch of Hot Cocoa Cookies.”

Zippy was expecting a custom apron made by the fabulous Aimee, unfortunately our move and a crazy ice storm delayed it’s arrival and he had to break the “no mess” rule.  If there is one thing we learned, an elf apron is a must for keeping your shiny red uniform clean while baking cookies.

Zippy carefully mixed all of the ingredients.

He was a little impatient and kept peeking in the oven to see if they were done.

Elf’s usually love to share, but Zippy had a hard time resisting these decadent hot cocoa cookies and surrounded himself with his fresh baked goods.

He eventually decided to share and whipped up a big batch of these delicious, chewy, chocolaty and oh so yummy hot cocoa cookies just for us!

Mini Hot Cocoa Cookies

The Elves’ 12 Days of Christmas Cookies (Day Eleven)
Recipe Type: Cookie

Prep time: 10 mins
Cook time: 12 mins
Total time: 22 mins
Serves: 16
Ingredients
  • 1 stick (4 oz.) unsalted butter
  • 12 oz. semisweet chocolate chopped
  • 1 1/2 cups flour
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups (packed) light brown sugar
  • 3 eggs, at room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • 30 marshmallows
Instructions
  1. In a medium saucepan, melt the butter and chopped chocolate, stirring frequently, over medium heat. Let cool for 15 minutes.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder and salt.
  3. Using an electric mixer, beat the sugar, eggs and vanilla at low speed until smooth, 2 minutes. Mix in the cooled chocolate mixture just until blended. Add the flour mixture in 2 batches, mixing on low speed until just combined. Refrigerate the dough for at least 1 hour. (If making the dough a day ahead, let sit at room temperature for 30 minutes before shaping.)
  4. Preheat to 325 degrees . Line 2 large cookie sheets with parchment paper. Using a tablespoon, scoop the dough and roll between your palms to form 1-inch balls. Arrange about 16 balls 2 inches apart on each cookie sheet, flattening slightly. Bake until the tops of the cookies crack, about 12 minutes.
  5. Meanwhile, snip 8 marshmallows in half.
  6. Remove the cookie sheets from the oven; gently press a marshmallow half into each cookie. Bake until the marshmallows are just softened, about 3-4 minutes. Transfer the pans to racks to cool for 5 minutes. Using a spatula, transfer the cookies to the racks; let cool.

 Oh dear heavens, does her elf really have an elf sized vintage oven?! My elf cannot even handle how adorable he is, and has a major crush on Zippy…and his oven now.

Since it's been so long since I've been able to enjoy a good ole’ Olive Garden soup, salad & breadsticks combo, I took matters into my own hands and recreated the experience at home complete with Pasta e Fagioli. 🥣 Side note: Did y'all know they sell their OG salad dressing at the grocery?! 😳 Since I'm also attempting to do better with meal prepping and make ahead meals this new year, I'm freezing half for the next time I have a craving I can't control...or the temps in Louisiana drop without warning. WINNING. 🙌🥣

#ad With its perfect shade of red, this fruity and #ad With its perfect shade of red, this fruity and festive, family-friendly Pomegranate Punch is sparkling and glistening....you won't even realize there's alcohol missing! Strolling through @Sprouts, I saw that the plump pomegranates were on sale and I had no choice but to add them to my buggy. They're delicious in recipes, but they serve double duty as serving tray adornment! 🙌 
Here's what you need to grab:
1 medium-sized pomegranate 
1/4 cup pomegranate juice (extracted from the pomegranate)
4 cups multi fruit cranberry juice (I used Langer’s Cranberry Plus also found at Sprouts) 
1 1/2 cups lemonade 
6 cups ginger ale 
garnishes: pomegranate arils, lemon slices, lime slices
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Prepare the pomegranate juice by first rolling the pomegranate to loosen the seeds. 
Cut the pomegranate in half, and hold each half over a bowl, seeds facing down and push inward on the skin forcing the seeds into the bowl. Reserve several arils for garnish; rinse and set aside. 
Add 1 cup of the removed pomegranate seeds to the blender. Pulse a couple of times, just enough to juice. 
Pour the juice through a fine mesh strainer and use the back of the spoon to gently press the seeds so that all of the juice is extracted. Set aside 1/4 cup. 
Add the 1/4 cup of pomegranate juice, 4 cups of fruit juice, 1 1/2 cups lemonade and 6 cups of ginger ale to a large pitcher. Stir to combine. 
Top with slices of lemons, limes and the reserved pomegranate seeds.

That's it. Load your serving tray up with extra fruit and then stand back and watch everyone rave and feel a little fancy- even the kiddos. ❤️
