When I sat down to edit the photos from Murphy’s birthday fiesta, I knew I would have to split the party into a couple of posts. It wouldn’t be fair to share a single photo of these Pulled Pork “Macho Nachos” without sharing the recipes for how they came to be. The beauty of Murphy’s Pulled Pork Nacho Bar is the pulled pork and the slightly spicy homemade bean dip.
The pulled pork couldn’t be easier and I’ve said it before, but anything you can toss into a crock pot the morning of a party is a winner in my book. And you know the way a crock pot makes your entire house smell like you’ve got something cooking? Well, that’s what greets your guests as they’re strolling through the front door.
Even if you don’t care for the pulled pork, you’re going to want to add the Gone in a Minute Bean Dip to your repertoire. It’s a Junior League of Baton Rouge (River Road Recipes III) recipe and I’ve made it no less than 5 times. This month alone. It’s good with Fritos, good on tortillas, and it’s especially good on these Macho Nachos!
- One 15- ounce can pinto beans, no bacon
- 2 cloves garlic, minced
- 1 1/2 tablespoon olive oil
- 1 1/2 tablespoon lemon juice
- 1/4 teaspoon ground cumin
- 1/2 cup picante sauce
- 1 tablespoon chopped green onions, garnish
- Drain beans well and blend in food processor along with the garlic, oil, juice and cumin. Transfer to a medium-size bowl and stir in picante sauce. Garnish with chopped green onions.
I’m calling them macho because holy cow, if you could put it on a tortilla chip, I included it.
Straight out the crock pot pulled pork, homemade bean dip/refried beans, two types of cheese, pickled jalapeños, black olives, sour cream and guacamole! I totally forgot to put the sour cream and guacamole on the sign, though. Good thing people can recognize the two. 🙂

We served them up alongside margaritas and had quite the fiesta. Thanks, Murphy for turning 2 and giving us an excuse to party.
