Summer Strawberry & Green Bean Salad

Mmmmm….. Are you seeing what I’m seeing? A summer salad bursting with color and flavor, easy as pie to assemble and super duper healthy. It’s crisp, it’s sweet, it’s salty. It’s just a really strange yet delicious combination!

Louisiana strawberries are seriously my most favorite thing to photograph. Their color just pops off the page and scream sweet summertime!

 

The homemade raspberry vinaigrette adds some additional sweetness with a bit of tang, but if you’re not in the mood to make your own dressing, just grab a raspberry dressing and call it good. If you’re local reading this and having a hard time finding the raspberry vinegar, I found mine at Rouses.

Sweet strawberries, salty feta, and crisp green beans combine to form an unexpected, but delicious side dish.

Ingredients

  • 2 1/2 cups green beans
  • 1 1/2 cups strawberries, sliced
  • 1/4 cup fresh mint
  • 1 cup feta cheese crumbs
  • pepper, to taste
  • For the Dressing:
  • 1 tablespoon raspberry vinegar
  • 1 teaspoon agave syrup
  • 1 teaspoon Dijon mustard
  • 1/4 cup olive oil
  • pinch of salt

Instructions

    To make the dressing:

    Add the vinegar, syrup, mustard and salt in a bowl and stir until smooth. Slowly add the oil, and whisk thoroughly. Set aside.


    Put the green beans in a saucepan of boiling water. Bring to a boil, then simmer for 5 minutes, or until desired tenderness.

    Drain into a colander, rinse, then drain again before putting into a salad bowl. Add the strawberries, and mint.

    Drizzle enough dressing to lightly coat then toss gently. Sprinkle the feta over the salad, and season with pepper. Serve immediately.

 

 

This salad is a beautiful addition to your outdoor cookouts, or a lunch side dish poolside.
