I am so excited to share these Red, White & Blueberry Cobblers with you just in time for the Fourth of July.
This holiday I’m going to try my darnedest to brave the heat, even for 5 minutes, to celebrate in style with a Fourth of July Picnic with my new bandana blanket (more on it further down), my gingham picnic basket I scored half price, and last but not least, a super-duper festive dessert, ala Red, White & Blueberry Cobblers.
I’ve had these mini loaf dishes forever and when I was pulling out all my red and blue paraphernalia, they were practically begging to be part of the picnic. I mentioned in yesterday’s Patriotic Porch Sangria post that I would be partnering with Wayfair this Fourth of July to showcase all the amazing holiday decor you can find on their website. Literally, everything you might possibly need. If you haven’t checked out my sangria post, hop over there and see my porch. I’d say 90% of my porch can be attributed to Wayfair purchases, and while I’m probably out of time this holiday, I’ve already ordered this doormat for next year.
Is it not fabulous? It needs to join my patriotic party I’ve got happening on my porch.
But before we get ahead of ourselves, though let’s talk about this year. I have had this bandana quilt/picnic blanket idea pinned for no less than 4 years. Every single year I say to myself “self, how hard can it be? Just make one already”. And every single year it gets put off to when I have more time.
That is, until this year. I went for it! I purchased the bandanas, and quilt batting and by golly I made myself a picnic blanket. It’s not perfect, and I’d die if you’d looked at it too closely but oh dear goodness, I love it. Brian couldn’t believe I made it myself and I’m not sure being able to tell him “I made that!” will ever get old.
You see where all of this is going, right? I made a picnic blanket and now I want to picnic. And cobbler. A Fourth of July Cobbler Picnic to be exact. Have you ever heard of something so delightful?!
What I love about cobbler is it’s no fuss appearance. It is easy to create and no one really cares how “pretty” it turns out. Fruit dripping down the sides? No one cares. Concerned with how small you scooped your serving and whether or not you look bad going for seconds? Problem eliminated with these individual portions! No sharing, no small scooping. Yours. All yours.
- 2 1/2 cups fresh blueberries
- 1 cup sugar
- 1/4 teaspoon ground cinnnamon
- 3 tablespoons cornstarch
- 1 cup cold water
- 1 tablespoon butter
- Cobbler Topping:
- 1 1/2 cups all-purpose flour
- 1 tablespoon sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter, cubed
- 1/2 cup milk
- 2 tablespoons cinnamon-sugar mixture, optional
- Whipped cream or vanilla ice cream, optional
- Preheat oven to 350 degrees.
- In a large saucepan over medium heat, combine the blueberries, sugar and cinnamon with 2 tablespoons of water. Cook and stir until mixture comes to a boil. Combine cornstarch and water until smooth then stir into the fruit mixture. Bring to a boil; cook and stir for 2 additional minutes until thickened. Pour into 4 greased mini loaf pans or a 8 inch square baking dish. Dot with the tablespoon of butter.
- For the topping: In a small bowl combine the flour, sugar, baking powder and salt. Cut in butter with either a pastry cutter or two forks until the mixture resembles coarse crumbs. Stir in milk just until moistened and drop by tablespoonfuls onto hot berry mixture. Sprinkle with cinnamon- sugar if desired.
- Bake, uncovered for 20-25 minutes until filling is bubbly and topping is golden brown. Serve warm, with whipped topping or ice cream.
I’ve taken a basic cobbler recipe and divided it into my 4 mini loaf pans, but you can use a single square baking dish if you’d prefer. You can also use any fruit your little heart desires. I was going with red and blue, hence the blueberries but cherries or peaches would be equally delicious.
So delicious, and festive….and easy!
