Blueberry Toast
Nope, I’m not quite out of blueberries yet. Just when I thought I was running out of things to make with blueberries, I whipped up some incredibly easy Blueberry Toast.
I’m telling you friends, I should be on the National Blueberry Board.
Or, the Association of Blueberry Lovers United.
Even better, chairman of The International Blueberry Bloggers Club.
I’m pretty sure none of those groups exist, but if they did…..I should be their spokesperson.
It’s a summer weight loss challenge around these parts with the husband and I (I’ve got Lily Pulitzer on the line) and while I cannot stand wheat bread, it’s what he’s choosing to have hang around the house so it’s what I had to work with.
If I can add some sweetness to something, chances are I’ll forget breakfast doesn’t include donuts.
Or not.
But at least it’s what I’m choosing to tell myself and get through the next month.
Surprisingly, this Blueberry Toast is not nearly as awful as I thought it would be. I mean, I did add cream cheese to it and if you wanted to be really healthy you’d use something like cottage or ricotta cheese.
Baby steps.
Although, if we’re being honest…cottage cheese is never making it into my breakfast rotation.
Here’s a slice for you, tell me what you think:
Not bad, right?
It’s no donut but it’s filling and sweet. And by golly, it looks pretty enough to make you forget you can’t have donuts all month.
Ok, ok. Not that pretty.
But it’s a start.
- 2 slices of whole wheat bread
- 2 tbsp low-fat cream cheese (slightly softened)
- Handful of fresh blueberries
- 1/2 tsp sugar
- 1/4 tsp cinnamon
- Mint, for garnish
- slices of whole wheat bread
- tbsp low-fat cream cheese (slightly softened)
- Handful of fresh blueberries
- /2 tsp sugar
- /4 tsp cinnamon
- Toast the bread as usual, then spread each slice with 1 tbsp of the cream cheese. Top with blueberries. Combine sugar and cinnamon; sprinkle on top. Place your Blueberry Toast into the oven, set to medium heat BROIL, and allow to heat just until the berries start bursting and oozing. Garnish with mint.
