These easy and delicious Mini Brookie Cups using box brownie mix hit all the high points whether you are heading to a tailgate or staying home and watching the game on television this football season.
They are easy, they are delicious, and they are perfectly portable; all prerequisites for tailgate treats. A boxed brownie mix is going to do most of the heavy lifting so you can seriously have these bite sized wonders ready in about 30 minutes.
They also solve the dilemma of whether to bring yet another tray of brownies or the same chocolate chip cookies you always bring. Merge those bad boys together and score big this season.
And while football lingo is still not part of my vernacular after all these years (14!) of marriage to a sports fanatic, and I cannot decipher what is happening most of any given football game as I’m too busy people watching, my ability to serve up crowd pleasing football game fare is top tier and my resume speaks for itself in that regard.

Mini Brookie Cups
A box brownie mix and a homemade cookie recipe come together for these portable and addictive Mini Brookie Cups that take less than 30 minutes to pull together.
Ingredients
- For the Brownie Layer (see package instructions)
- 1 (18 oz) package fudge brownie mix
- 2 eggs
- ½ cup vegetable oil
- 3 Tablespoons buttermilk (substituted for the water)
- For the Cookie Layer:
- 3 Tablespoons unsalted butter, melted
- 2 Tablespoons granulated sugar
- 2 Tablespoons light brown sugar
- 1 egg yolk
- ½ teaspoon vanilla extract
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup all-purpose flour
- 1/2 cup semisweet chocolate chips
- Sea salt, for sprinkling (optional)
Instructions
Preheat oven to 350 degrees. Spray a mini muffin pan with nonstick baking spray, or line a regular baking pan with cupcake liners; set aside.
In a medium sized bowl, combine butter, sugar, egg yolk and vanilla extract.
Add the baking soda, salt and flour; use a spatula to mix until just combined and the flour is no longer visible. Fold in the chocolate chips.
Make the brownie batter according to package instructions,
substituting the water with buttermilk. *The ingredients shown here are what
was on the back of my brownie mix.
Spoon brownie batter into each cup, filling a little more than halfway. Roll cookie dough into little balls, about half inch wide, flatten slightly, and press into each brownie cup.
For mini brookies (baked in a mini muffin tin), bake for about 12-15 minutes, or until the brownie batter no longer looks wet and a toothpick comes out mostly clean.
For cupcake size brookies (baked in a regular muffin tin),
bake for about 25-30 minutes, or until the brownie batter no longer looks wet
and a toothpick comes out mostly clean.
Sprinkle the tops of each brookie cup with sea salt, if desired.
Once the brookies have cooled, about 10 minutes, remove them from the muffin pan.
Notes
Prepare the brownie batter according to the box instructions, substituting only the water with the buttermilk. The above ingredients are what were on my brownie box.
Remove the brookies before they are completely done as they will continue baking in the pan while they cool.
Wondering if you can skip the muffin pans altogether and bake them slab style like they do at Domino’s? YOU CAN. Follow all the same instructions but instead pour the brownie batter into a larger baking pan then drop the cookie dough onto the top. You’ll need to increase your baking time substantially, about 45 minutes or according to the instructions on the brownie box for your specific size pan.
