Homemade Pimento Cheese Stuffed Sliders

It’s almost game day, y’all and if we’re being honest with one another, I look forward to the food much more than the actual game. At any given moment I cannot tell you what’s happening on the field, but I can tell you approximately when the chip bowl needs to be refilled, or the burgers need to come off the grill. And speaking of burgers, these Homemade Pimento Cheese Stuffed Sliders are enough to get your engines purring on the day that happens just once a year, when all your neighbors stand up and cheer.
(that lovely little rhyme was on accident).
Homemade Pimento Cheese Stuffed Sliders
I received a question just last week regarding the specifics of pimento cheese and it made me realize that the bright orange cheese might not be as common in the northern states as it is down here in the south. Down here, it’s pretty much a staple. We put it in our grits and onto our crackers, we put it in our eggs, and sometimes we might even eat it straight out of the container if we’re not feeling very ladylike. In today’s case, I’ve stuffed it inside my burgers!

Before we get ahead of ourselves, let me share with you one of the recipes from my new cookbook, Picnics, Potlucks & Porch Parties! Pimento Cheese Stuffed Poppers and Pimento Cheese Stuffed Burgers both appear in the book and so it was important to me to teach you guys how I made my homemade pimento cheese from scratch.
Homemade Pimento Cheese
Recipe Type: Appetizer

Prep time: 5 mins
Cook time: 15 mins
Total time: 20 mins
Serves: 3 cups
Ingredients
  • 1 large pimento or sweet red bell pepper, halved
  • Olive oil
  • Sea salt to taste
  • 1 pound sharp Cheddar cheese, shredded
  • 4 tablespoons mayonnaise
  • 1⁄4 cup minced red onion
  • 1⁄2 teaspoon garlic
  • 1⁄2 teaspoon black pepper
  • Salt to taste
Instructions
  1. Preheat oven to 450 degrees.
  2. Place pepper halves on baking sheet, brush with olive oil, and sprinkle with
  3. salt. Roast until skin is blistered, about 15 minutes. When cool enough to handle, remove the peels, chop, and place in a large bowl.
  4. Add cheese, mayonnaise, red onion, garlic, and black pepper. Gently stir until pimentos are evenly mixed, and mayonnaise binds with cheese. Add salt to taste.

Super easy and oh, so yummy!
Once you have your pimento cheese all assembled, set it aside and form your burgers. You’ll want to create 2 patties for each slider you want to serve.

Spoon about 1/2 tablespoon of pimento cheese in center of your slider hamburger patty. Top with another hamburger patty, pressing edges to seal. Sprinkle with salt. Cover, and chill at least 30 minutes. Preheat grill to 350°–400°. Grill burgers with lid closed 4-6 minutes on each side, or until beef is no longer pink. Serve on buns with desired toppings.
