Cast Iron Skillet Cookie

Just in time for Valentine’s Day, I’m sharing this oh so cute, super adorable Cast Iron Skillet Cookie recipe that can be made in a regular-sized cast iron, or two mini skillets allowing you to have one for sharing, and one for yourself….er, or for gifting I mean.

But more importantly, I’m sharing the recipe for a good cause because it is part of this year’s Cookies for Kids’ Cancer annual Valentine’s event. This is the fifth year for our event (here’s my previous year contributions: Valentine’s Day Mug Hug Cookies and these Peppermint Brownie Cookies ) and we want to continue to make a difference in the fight against pediatric cancer.

Skillet Cookie Cake

Cancer is the #1 cause of death of children by disease in the U.S. There are 40,000 U.S. children actively battling cancer right now. The National Cancer Institute’s budget for childhood cancer is less than 4%. It’s such a small number and that’s why I got involved.

And with the ongoing pandemic, children are still being diagnosed with cancer. It’s imperative that we raise awareness and continue to raise funds to fund the ongoing pediatric cancer research!

Cast Iron Skillet Cookie

What I love about this recipe is its versatility. Feeling like one giant skillet cookie? Bake in a 10 inch cast iron skillet. Not feeling like eating quite so much at one time, divide the recipe into two smaller skillets and enjoy one yourself, while sharing the other with a neighbor or friend.  

The mini skillets are the perfect size for a sweet ending to date night in, and especially festive for Valentine’s Day with festive colored M&Ms.

Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes

Perfect for date night in and especially for Valentine's Day by adding pink and red M&Ms, this easy Cast Iron Skillet Cookie is easy, delicious and super fun to share!

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1/2 cup light brown sugar
  • 2 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • pinch of salt
  • 1 cup chocolate chip morsels/ chocolate chunks
  • 1 cup M&Ms (optional)

Instructions

Preheat oven to 350 degrees. Spray a 10 inch (or 2- 6 inch skillets) cast iron skillet with non-stick cooking spray. Beat the butter and sugars together until light and fluffy. Add the eggs and vanilla extract, mixing to combine. In a separate bowl, whisk together flour, baking and salt; gradually beat into sugar mixture. Gently stir in chocolate chunks and M&Ms. Spread the mixture into the prepared skillet(s).

Bake until toothpick inserted in the center comes out mostly clean with a top that is golden brown. For mini skillets, about 30-35 mins. Serve warm with ice cream on top.

The combination of a warm (oversized) chocolate cookie combined with vanilla ice cream is hard to beat. It’s the perfect treat for sharing right out of the skillet. Why bother with plates? Just grab two spoons and dive on in.

The combinations are endless as well. Chocolate chips or chocolate chunks? M&Ms with peanuts or without? Sprinkled with sea salt or left plain? To pecan or not to pecan? Extra drizzle of chocolate syrup? You certainly could!
