White Chocolate Peanut Butter Crunch Balls

Holiday gift-giving is upon us and these White Chocolate Peanut Butter Crunch Balls are a perfect addition to a holiday sweets tray, for cookie swaps (although they’re not exactly a cookie), or for neighborhood gifting.

They are easy. They are no bake. And they make A TON. 

If you’re not needing quite so many, the recipe can be successfully cut in half. Especially helpful in a season like 2020 when your holiday gatherings are downsizing and you may be foregoing cookie swap type events. 

The White Chocolate Peanut Butter Crunch Balls can also be colored with food coloring if you want to have fun with the kids, or left au natural as I have.

These White Chocolate Peanut Butter Crunch Balls are a perfect addition to a holiday sweets tray, or for neighborhood gifting. Bonus: they are no bake!

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1 1/3 cups crunchy peanut butter
  • 1 cup butter, melted
  • 1/2 cup chopped toasted pecans
  • 2 teaspoons vanilla extract
  • 1 (16 ounce) package confectioners sugar
  • 2 (12-ounce) packages white chocolate morsels
  • 1/4 cup shortening

Instructions

Line a couple of large baking sheets with parchment paper and set aside.

Stir together the first 7 ingredients until well blended. Using a small cookie scoop or your hands, roll mixture into 1-inch balls; place on parchment paper lined baking sheets.

Microwave chocolate and shortening in a medium microwave-safe bowl 1 to 2 minutes, stirring every 30 seconds, or until melted and smooth. Using 2 forks, dip each ball into chocolate mixture, gently tapping off the excess. Return to baking sheet. Let stand until set, or chill 30 minutes for a firmer coating.

They are similar to these Buckeye ball type dessert but include pecans and graham crackers ensuring all the crunch! Naturally, you’ll only want to gift these to those with no known nut allergies.
