Welcome springtime with this Homemade Egg Salad recipe, perfectly delicious on croissants.
Our weather the past few weekends has been absolutely fabulous. Sun shining yet a cool breeze blowing. Oh, if only we could bottle it up for when Summer rears its ugly, hot and obnoxious head! It’s the perfect weather for dining al fresco and my Egg Salad Croissants are just what you need for a lovely front porch brunch.
Add some mimosas, fresh fruit and finish with a dessert, like the Blueberry Pecan Cobbler seen here and you have just the recipe combination for a deliciously quaint afternoon outdoors.
And if you’ve never had egg salad, you must! It’s basically just eggs and seasonings bound with a bit of mayonnaise and while you can certainly spread onto plain ole’ white bread, I really love it on a buttery croissant. So simple and so delicious.

Completely unintended for my cover shot to include a sandwich, but when the egg salad photos made it into the top 4 cover mockups there was just something so inviting about the front porch brunch that we decided to use them for the cover.

Egg Salad Recipe
Homemade Egg Salad is delicious on a buttery croissant, but equally scrumptious on sandwich bread.
Ingredients
- 6 hard boiled eggs, peeled and chopped
- ¼ cup Mayonnaise plus more for spreading
- ½ teaspoon Dijon mustard
- ½ tablespoon dill relish
- ½ tablespoon sweet relish
- ½ teaspoon onion powder
- ¼ cup thinly sliced pimento-stuffed olives
- salt and pepper, to taste
- paprika (optional)
- 4 large croissants, split in half
- 4 romaine lettuce leaves
Instructions
Combine eggs with the next 5 ingredients; mix well. Stir in olives.
Place lettuce over bottoms of croissants; top with egg mixture, sprinkle with paprika (if desired) and croissant tops.
And speaking of inviting, it’s also time to work on revamping the front porch to make it a bit more welcoming and springtime festive. I visited a porch today that had the most fabulous outdoor curtains and it seriously made me want to plop down and read a book. And now I want outdoor curtains.
Sigh.
Guess I’ll just daydream of porches lined with curtains while I plot who I can invite over for Egg Salad Croissants.
