We had a bit of elf emergency yesterday.

Elves are fine.

Owners are fine.

Just a little bit of life happening and getting in the way of cookie making.

No biggie.

I’m happy to say that we’re back today!  And not only are we back, we’re back with one of my favorite bloggers and newly appointed elf owner Courtney from  Pizzazzerie.

Courtney and I have been bloggy BFF’s and conference roommates for about 2 years now and I’m thrilled beyond thrilled that in preparation for her new baby (eek!!!) she’s gotten herself an elf.

I could think of no other elf that needed a bow tie apron more than her elf, Fred!

(And no, I don’t have any inside information regarding the gender of her unborn child just because I was first to know her elf’s monogramming preferences)

So without further adieu, here’s Courtney:

“I’m soooo excited to be a part of Aimee’s 12 Days of Christmas Cookies! I just adore the Elf on a Shelf and even though I’m not expecting my first until next spring, I had to get my elf ready to go for all the future years of “elfing” we will have! My elf is named Fred and LOVES chocolate! Convenient because so do I!

This recipe for Chocolate Pecan Lace Cookies is from my great-grandmother, and I just love the crispy cookie paired with the chocolate and crunchy pecans. It’s a great cookie for packaging up for friends, neighbors, etc! Fred loves to give them to all his elf buddies.”

Chocolate Pecan Lace Cookies

Serves: 36
Ingredients
  • 1 cup all-purpose flour
  • 1 cup sweetened coconut
  • ½ cup light corn syrup
  • ½ cup brown sugar, firmly-packed
  • ½ cup butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups chocolate (melted) or chocolate bark (melted)
  • ½ cup chopped pecans
Instructions
  1. Preheat oven to 350 degrees F.
  2. Combine the flour and coconut. Set aside.
  3. Mix the corn syrup, brown sugar, and butter in a saucepan over medium heat. Stir with wooden spoon. Once mixture comes to a rolling boil, remove from stove.
  4. Add the vanilla extract. Add the flour mixture (a little at a time) and stir until smooth.
  5. Drop teaspoon-size amounts of batter about 3 inches apart (cookies will spread) on parchment paper and bake for 6-8 minutes (or until edges are golden brown).
  6. Remove from oven and let cool.
  7. Dip each cookie into melted chocolate and sprinkle with chopped pecans. Let cool and enjoy!
  8. Yields: 36-48 depending on size.

I’m seriously dying over how cute Fred is with his fabulous cookies and his Merry Christmas Y’all little self.

Dixie Crystals Bake Off 2

Hey Ya’ll!

I thought I’d share a quick recap of the Mixed Conference this past weekend.

You know I entered a cookie contest. You know I was a finalist. You know I made a fancy apron and was a nervous wreck. You know I thought I had no chance.

And then I WON! Or, my cookies rather. Click here to take another peek at those Pecan Praline King Cake Cookies for everyone who has been asking to “Show Me The Cookies!”.

The weekend is a blur, but here’s a few highlights I thought you might enjoy.

The hotel.

Holy cow, batman simply being at Kellerman’s Mountain House-the hotel where Dirty Dancing was filmed was in and of itself an experience.

No cell service. Spotty wi-fi. No televisions. No irons. No hair dryers. No connection to the outside world, really.

Had I not been whisked (get it, whisked) off to bake a truck load of cookies, I might have found it quite relaxing.

However, upon 30 minutes of checking in I was in a commercial kitchen, surrounded by a sea of Kitchenaid mixers and unfamiliar ingredients.

Here I am.

I look so confident, right?

Um, yeah. About that. I was a nervous wreck. Primarily because I had no means of ironing my apron.

I would like to take this time to publicly thank my roommates, Courtney from the go to entertaining site Pizzazzerie and Sandy from the delicious site Firefly Confections. These girls were the BEST cheerleaders. I am beyond grateful to call them friends and cannot thank them enough for their unwavering confidence.

When I wasn’t thinking about who was going to win the cookie contest, I was decorating cookies with Sweetopia.


She taught me to decorate. And my cookies kind of rocked.

She is seriously as sweet as can be. Like she doesn’t even realize she’s Sweetopia.

Then there was Duff Goldman. I need an entire post to talk about what an awesome hunk of a person I think he is.

I also need an entire post about how wearing your “brand” and believing in yourself catapults you into situations that are beyond your wildest dreams. Wild, you guys. Wild.

PS: Never ever take your hair out of a ponytail for a photo. It’s not good. Not good at all.

It’s crazy unflattering. I look like I’ve eaten ALL the cookies at the conference. But it’s the polite way to accept your prize.

This however, is probably not. Someone should have warned the Dixie Crystals marketing team…..this is what happens when a girl from the South wins the prize.
