Pecan Pie Muffins

The other day my thoughts were completely consumed with Pecan Pie. Even though we’re springing into Spring and Pecan Pie is usually what I crave in the Fall, something about that day had me wishing I had a slice of Pecan Pie. I was delighted to find pecans in the pantry leftover from this pie and I took it as an omen to make myself a pie. But by the time I got around to making the pie, I no longer wanted pie. Instead,  I wanted something that would compliment breakfast and would look good in a basket. Pecan Pie Muffins for the win!

Pecan Pie Muffins

Incredibly easy and it’s just like enjoying a slice of Pecan Pie….without the need for utensils!

Pecan Pie Mini Muffins

Ingredients
  • 1 c. packed light brown sugar
  • 1 c. pecans, chopped
  • 1/2 c. flour
  • 1 stick butter, melted
  • 2 eggs
  • 1 tbsp. vanilla extract
Instructions
  1. Mix the brown sugar, pecans and flour in a mixing bowl. Whisk the butter, eggs and vanilla extract in a separate bowl until well blended. Combine the butter mixture into the brown sugar mixture, slowly, and stir just until moistened.
  2. Fill paper-lined miniature muffins cups about 2/3 full. Bake at 350 degrees for about 20-22 minutes, or until a toothpick comes out clean. Serve warm.
  3. Makes approx 2 dozen muffins.

I could eat pecan pie every single day if the waistline allowed.

But since it’s really not advisable to have that much pie, these little Pecan Pie Muffins will do just the trick when you’re craving pecan pie but don’t want all the calories (or work) that an actual pie will involve.

Small in size but large on flavor, they are bite sized pecan pie goodness.

And they whip up in 20 minutes.

So. So. Good.

Have them with your morning coffee and you’ll find yourself wanting to frolic through the day with a little extra pep in your step.

Afternoon snack to cheer you up when your tax preparations have you stressed out? They’ll work for that!
