With the holidays quickly approaching it’s always a good idea to have a recipe on standby for those days when you have family in town and need something delicious to serve but not a full on “holiday dish”, or one that will compete with the traditional sweet potatoes and turkey that you may be serving on the big day.

This Chicken and Wild Rice Amandine Casserole can be used as an additional side, or can stand on its on as an entrée depending on how many guests you have. With just enough chicken, you could easily serve it with bread and a salad and call it a day.

The word amandine simply means the addition of almonds, and in this dish it gives it a nice crunch and compliments the tender chicken nicely.

Sometimes, casseroles get a bad wrap for not being the prettiest of dishes to serve, but with the right amount of seasonal décor, this casserole can hold its own!

Simply garish with some parsley, serve with wine, light up the candles and you have yourself not only a uniquely flavored dish but an elegant evening at home before the holiday entertaining is in full force!

Ingredients
  • 1 package of Uncle Ben’s Whole Grain & Wild Rice (I used the one with mushrooms)
  • ½ cup olive oil
  • ¼ cup chopped onions
  • ¼ cup chopped chives
  • ¼ cup chopped bell pepper
  • 3 cups Swanson® Tuscan Chicken Flavor Infused Broth
  • 3 cups chopped rotisserie chicken (I bought a pre-cooked one and just deboned)
  • ¾ cup almonds, slivered
  • Salt and pepper to taste
Instructions
  1. Sauté vegetables in olive oil until translucent.
  2. Add the rice and sir to combine.
  3. Stir in the chicken broth and salt and pepper.
  4. Add almonds and cooked chicken; combine thoroughly.
  5. Pour into casserole dish.
  6. Bake uncovered in a 325 degrees oven for about 1 hour or until rice is tender
